Fall into Cozy Comfort: An Autumn Soup for You

As a real estate agent, I’m all about helping you find the perfect place to call home. But you know what’s just as important as finding the right home? Creating warm, inviting moments within those four walls. This soup is a crowd-pleaser in our house, and uses two things you can easily find in the fall: butternut squash and apples! I hope this will fill your home with the scents of the season and warm you on a cool day!
Ingredients:
- 2 turns around a LARGE saucepan of extra-virgin olive oil (approx. 2 tablespoons)
- 1 medium onion (slice in half, then slice THIN)
- 3/4 cup apple cider
- 1 2-pound butternut squash — peeled, seeded, diced to about 1-inch squares (6 cups, if you can get that)
- 4.5-5 cups high quality chicken stock (low-sodium or your own homemade)
- 1/2 cup heavy cream
- salt and pepper to taste
- 2 tablespoons butter
- 1 apple (Empire / Cortland / Macoun / Macintosh), cut into half-inch dice (small!)
- 1/2 cup coarsely shredded cheddar cheese (maybe save a spoonful for garnish for those who like)
- Chopped chives or chopped fresh sage leaves as garnish
Instructions:
- In a large saucepan, heat the swirls of olive oil. Add the onion, cook over medium-high heat, stirring often (lower heat when needed), until golden. About 8-10 mins. Add the apple cider and cook until syrup-like, about 3-4 minutes. Add the butternut squash and chicken stock and bring to a boil. Cover, lowering to a simmer until the squash is very tender, about 40 minutes.
- In a blender, puree the soup in batches. Return the soup to the saucepan and stir in the cream. Season with salt and pepper and keep warm.
- Heat a medium skillet. Add the butter and diced apple, cooking over high heat until the apple is tender and golden around the edges, about 2 minutes. Remove skillet from heat. Season lightly with salt and pepper.
- Spoon the soup into warmed bowls. Garnish with the cheddar, sauteed apples and chives.
MAKE AHEAD OPTION: Soup can be refrigerated for up to 2 days. Reheat before garnishing with the cheddar, apples and chives.
